This is one of my favorite soups, traditional Mexican chicken soup calls for chicken, potatoes, tomatoes, carrots, and squash. I made this soup with whatever vegetables I have in the refrigerator.
Ingredients:
Homemade chicken broth
Vegetables - carrots, tomatoes, roasted chile, corn on the cob, and asparagus.
Garnish - cilantro, avocado.
Seasoning - salt, pepper, lemon juice.
Bring chicken broth to boil, add vegetables and cook until tender, season to taste.
Ladle soup into soup bowls, garnish with chopped cilantro and sliced avocado.
Top soup with a slice of lemon or lime and serve with rice or tortilla.
